Fried Eggplant (มะเขือยาวชุบไข่ทอด)
An easy and quick way to prepare eggplant to serve with my favorite Thai Shrimp Paste Chili Dip: Nam-Prik-Gapi(น้ำพริกกะปิ) and jasmine rice as a delicious meal from my childhood, but my husband prefers to eat this tasty fried eggplant with the sweet chili sauce. Yum!
Ingredients
1 large Chinese eggplant, sliced
3 eggs, beaten
2 teaspoons all-purpose flour
pinch of salt and white pepper
canola or vegetable oil for frying
Directions
Mix the eggs, flour, salt, pepper, and whisk to combine.
Heat oil in a large skillet over medium-high heat. Dip eggplant slices in the egg mixture and gently place in hot oil. Fry about 1 minute on each side or until golden brown. Drain on the paper towels.
Serve hot with Thai Shrimp Paste Chili Dip or sweet chili sauce. Enjoy ka.
