Baked Salmon with Soy Sauce




       This is a simple and healthy salmon dish that I have been making it for years. Perhaps I could not live without soy sauce and garlic. It is tasty recipe and you can add your favorite veggies into it. This cooking time is about 2o minute weeknight recipe that you can serve company anytime. 

Ingredients:

1 pound salmon fillet
1 zucchini squash, thinly sliced 
2 garlic cloves, thinly sliced  
2 teaspoons soy sauce 
1 teaspoon garlic powder 
pinch of salt and pepper 
1 tablespoon olive oil 
1/4 cup water 

Instructions:

Start to clean and cut salmon fillet into pieces. I like to marinate it in advance for several hours before baking and it will make it more flavorful. 
Add little bit of water and place salmon in a baking dish and sprinkle with garlic powder and soy sauce. Add half the zucchini around the salmon and sprinkle garlic, salt, pepper, and good amount olive oil. I like to marinate in advance for several hours in refrigerator. 

Bake in the oven 400 degrees about 20 minutes, but if salmon is from the freezer, it will take longer about 30 minutes. Cover the baking dish with the lid or aluminum foil about 10 minutes.
Serve hot with vegetable salad or baked potatoes or your favorite side dishes. Enjoy!
