Larb or Laap is a spicy minced meat salad and can be found on menus in most Thai restaurants. However, the recipe varies in each region of Thailand. This salmon larb is a quick and easy salad and is not too spicy. It can be served with fresh vegetables and sticky rice.
Ingredients
1 pound salmon fillet
2 teaspoons soy sauce
2 cloves garlic, minced
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/3 cup water
1/3 cup chopped scallions
1/3 cup chopped dill
1/3 cup chopped mint
2 tablespoons toasted rice powder
3 tablespoons lime juice
1 tablespoon fish sauce
1/2 teaspoon red chili flakes
1 shallot, sliced
mint leaves for garnish
Directions
Preheat the oven to 380 degrees.
Place salmon in a baking dish, add water, soy sauce, garlic powder, minced garlic, and onion powder. Bake salmon about 15-20 minutes or until salmon is cooked through. Using fork and spoon to separate the fish into small bites and remove skin from the dish. Add salmon in a mixing bowl, stir in sliced shallot, fish sauce, lime juice, red chili flakes, chopped spring onion, mint, dill, and mix well. Garnish with mint leaves and check the seasonings. Serve with fresh veggies and sticky rice if desired. Enjoy ka!
